
An Essential oil is a concentrated essence extracted from the plant.
It is the Essential oils within a plant that give them their characteristic scent or flavour. As part of the plants own immune system, they help to resist fungal and baterial infection.
Each essential oil is made up of hundreds of different natural chemical compounds. It is the presence and combination of these compounds that give each essential oil its own characteristic fragrance.
It is because of this interaction between so many different compounds that makes it almost impossible for oils to be produced artificially.
Lavender contains oil throughout the foliage, but the largest concentration is held in small glands at the base of each flower.

These small balloon-like structures slowly fill with oil during periods of hot dry weather during the summer months. These glands are very delicate and will burst if touched when laden with oil. It is this release of oil that gives lavender its fantastic intoxicating scent when brushed against in summer.
